Mess Hall Inihaw na Manok

How to prepare your Inihaw na Manok:

    1. Thaw out the meat in the fridge overnight. 2. Score the underside of the chicken with deep, even cuts, around 0.5 CM deep. 3. In a clean shallow pan, pour enough oil to generously cover the bottom. Preheat over medium heat until slightly smoking. 4. Sauté chicken skin-side up first, covered, for around 6 min. Flip and sear skin-side down, uncovered, until skin is golden brown, around 2 minutes. 5. Remove from the pan and transfer onto a plate. Garnish with fried garlic and serve with house soy sauce.
